The Best Black Bean Burgers. Ever.

So. I don't usually share recipes around these parts. But these black bean burgers. Wow. Matt loves them. I love them. They are great as left overs. They have the perfect amount of spice and protein and, the best part, they come together in about 15 minutes!
So here's what you need:
  • 1 16 oz can of Black Beans (drained and rinsed)
  • 1 cup corn OR 1/2 green or red pepper, cut into wedges
  • 1/2 red onion, cut into wedges
  • 3 garlic cloves, peeled
  • 1 egg
  • 1 tbs chili powder
  • 1 tbs cumin
  • 1 tbs thai hot sauce - we love Cholula
  • 1/2 cup bread crumbs (if you don't have any, I find that crushed ritz crackers work great)
Preheat oven to 375 degrees, and lightly oil a baking sheet.
In a food processor, finely chop onion, garlic, and corn. 
Dry rinsed black beans - this will help the burgers stick together. Then, mash in a medium-sized bowl.
Then, stir the chopped onion/garlic/corn into the beans.
In a small bowl, stir together the egg, chili powder, cumin, and hot sauce.
Mix the egg mixture into the black beans. Then, add the bread crumbs. If the burger mix is still a little runny, add a bit more bread crumbs. Separate the mixture into four patties. Place on a cookie sheet. Or if they are all dirty, be lazy and put them in whatever oven-safe container you have.
Bake for 10 minutes on one side. Flip, then bake 10 more minutes. While they are cooking, kick back - have a glass of wine - you deserve it!! I also toast some buns, cut some avocado, lettuce, and tomato.

Look how delicious they look! I always put some salsa and sour cream on top. So good.
